I don't want to give a 4 win player more than 15 mil a year really, and last year was the only time Mei has lived up to his potential. If he posts a second straight 7 win season, I'd consider bumping it up to 21-22 or so over 5, but that's still only 100-110 mil total. Even at that price he'd be hard to build around without a lot of young, cost controlled talent.
I know players are often asking for 25+ these years, but show me a team that repeatedly makes the playoffs with more than one of those albatrosses on its books and I'll relent. I'd argue that most teams with even ONE deal in that range have to pull of some pretty interesting salary cap gymnastics to make it work for even one year at a time.

Mei is going to be an interesting case because he's 26 and has been growing in a really nice path. He's also a pretty fair defensive catcher. It won't surprise me to see him get $20M. Compare him to my own Aaron Stone. Stone is less of a defender, and not so brilliant vs. RHB, but my guess is he'll get $12-$15M from someone. He's asking for considerably more than that to sign.
Bottom line is that my guess is that careful free agency work is going to become more important for roster construction in the future--which is very much like modern baseball GMing, I suppose.

Of the seven players making more than 19 mil per, five are on playoff teams. Let's look at those five. Rockville has two in Dan Cannon and Enrique Gomez. Rockville can expect to make a bunch of playoffs in a row. They can only afford those contracts because they stuck for about five years and aren't paying anything to 3/4ths of their team.
Winson and Jenkins are complete albatrosses. Alfredo Salazar helped ATC to the playoffs, and they are pretty much an every other year team because Biddle is a freaking wizard.
Then you have Sweetworld and Harnett for Vegas. Ask Recte how he feels about his ability to add depth last year when he desperately needed it. He had injuries, and had no ability to add to the roster in a big way to compensate for them. Harsnett and Sweetworld combined for less than 8 WAR.
I just think looking at the other deals of that size and the teams they are on shows you what a deal that big forces you into. It's not necessarily bad, but ti does limit your options, and you have to have the right roster to work it.

That's a nice look at things.
It's also interesting to look at and think about the sub $19M list, and see the kinds of deals teams have made. If the $19 + range is generally focused on big overspends for a specific roster/purpose, the $15-$18M range is probably about market value for a star. By raw financial mechanisms, these players are over-paid for their true "worth," but competitive teams will need some of these guys because they are (generally) reliable sources of multiple WAR.
Cannon and Gomez, for example, are probably not actually "worth" $24M and $22M as individual players, but given (as you noted) Aaron's well-managed situation, he could handle the over-payment and it was well worth it because barring injury you're pretty sure you're going to get elite numbers. Compare them to LaLoosh at $16M and you'd be hard pressed to say that if they were all in the FA market at the same time you'd be willing to pay that $6M gap for Cannon vs. LaLoosh (ignoring, for a moment, Cannon's 27 and LaLoosh 31). Or Freddy Delgado at $15M, for that matter.
Every team who competes is eventually going to sign bigger contracts. So how and when to do it is fun to watch.

one of the key reasons I made the Delgado trade was because I loved his contract. 15 for this year, but drops to 12 for the next 3 before a team option at 13.

I think a team could give Mei a big contract. Even 6 years would only take him to age 33. The thing to watch our for is that his ability is only 6 right now. If that lumps to 5 or 4 then a good team will probably not want to play him at catcher anymore. He's going to get paid big no doubt. But that contract will look bad if he ends up being your DH in 3 years.

Interesting. He is asking 23M per. I'm struggling. I might try to get him down some, but I worry about giving him TOO much.

On talent he's a 20M player. I hate giving that to a catcher since they need more offdays than the other positions, though. Of course, he played quite a bit last season (140 games and >500 ABs).

I think the "on talent" is the biggest park. If last year wasn't the first year he played up to his potential, I'd be much less hesitant. But If he's gonna be the 4.5 WAR version half or more of the time, it's just too much money.
