I've been reviewing club history prior to 1995, to the extent that I can.
I have a couple of observations. When looking through what is available in the old 5/11/06 archived forums (which are in 1992 in-game, I think), I see that Mike Wilkinson was in charge of the club for at least parts of the 1991 and 1992 seasons, though his name doesn't appear in the unified history document. Unfortunately, the old Team News posts don't appear to have been archived.
It looks like Valencia was known as the suns from 1973-1994, and became the stars in 1995, but possibly before then.
I found this old logo:
Are there other old logos kicking around? I'd like to do a logo timeline for this club as a feature, and while I have no problem with making stuff up, I'd like to cover and recognize any prior work done in the past.

Valencia is a proud original franchise. I'm so happy that someone like you has come along to carry it forward.
